Arroz con Leche
Arroz con Leche (rice with milk) is a dessert that the Spanish brought with them as part of their menu when arrived in what now is Mexico almost 500 years ago; it is our version of rice pudding, a treat that every household prepares with different toppings and variation of some ingredients to claim the have the best recipe. It is a perfect balanced sweet treat for cozy afternoon.
Mexican Rice Pudding with Figs and Pistachio. Serves 4.
100 gm of rice
250 ml of whole milk
1 cup of condensed milk
1 anis star
1 cinnamon stick
1 tablespoon of orange zest
2 tablespoons of chopped pistachios
In a medium pot add 3 cups of water and bring them to boil, add the rice and cook for 15 min then drain and set a side. While the rice is cooking, in another medium pot heat the milk and the condensed milk at a low heat, add the cinnamon and anis. When it starts boiling, turn the heat off, cover it and let it infuse for 10 min. Add the rice and orange zest and cook over low heat to finish cooking the rice for another 10 min with the milk.
When the rice is completely cooked, remove from heat and let it cool.
In a bowl, add the rice and sprinkle it with chopped pistachios and top with a couple of sliced figs. Enjoy!
