Rosalia Chay and her family have lived for generations in Yaxuna, a small community of 700 plus inhabitants, a few miles from Valladolid, in the municipality of Yaxcaba, Yucatan. Since childhood, she was taught the importance of preserving and passing traditions to the next generations, something that she strongly believes and practices until this day. Her first exposure to the kitchen started the moment she learned to make tortillas. Throughout the years, she was passed recipes, techniques, and customs that her grandmother and women of her family had been preserving for generations. What makes her food so special and unforgettable? That would be the preservation of the integrity of the recipes, ingredients, and techniques.

People from all over the world, including famous and acclaimed chefs, have come to Yaxuna and sat at Chef Rosalia’s table to have a taste of her food. This is one of the most unique opportunities to experience, not only the best Cochinita Pibil taco  you will probably have in your life they say, but also to learn more about the history and traditions of this very exciting cuisine and region.
